It's to help keep the saw cool. If it overheats too much, the blade will distort and wobble. It also cuts down on dust and helps lubricate the saw.

Water is nature's #1 lubricant and coolant. The blade has diamond teeth but the rest of it is steel. Also keeps the cutting line clean and dust free.

Have you ever seen concrete cutting? They do it with a big saw with a lot of water pouring on it. This washes away the concrete dust and also cools the saw. You CAN do it without water but it would be a lot slower. And time is money!

This keeps the blade and the cutting area wet to remove the cutting dust from the cut area, cool the blade, cool the concrete, and prevent dust clouds that would both foul up breathing air and make a dusty mess for some distance from the cutting

Metal holds many small industrial quality diamonds in place. If the bit gets too hot the metal melts and the diamonds fall out. Water cools the bit.
